ELDERBERRY SYRUP KIT // Makes APPROX 1.5-2.5 cups, depending on how thick you want your syrup.
This recipe is for more of a maple syrup-type consistency than a thick syrup. If you want thicker syrup, you will need to cook some of the water off or add additional honey, or both. I, personally, prefer a more thin syrup because it gives me more use in teas and on waffles!

This recipe is my go-to for the winter months when my family's immune systems seem to take a hit, and now you can make my same recipe in the comfort of your home. This kit is designed to allow you to make the most of my recipe by using honey that is local to your area, or, if you need a vegan- / infant-friendly version, you can substitute agave nectar instead. It is imperative that you follow the directions exactly and PLEASE do not skimp on the cooking and steeping times, as elderberries contain cyanogenic glycosides, which are toxic, and need to be cooked thoroughly. Please keep the raw elderberries out of reach of pets and children and should ingestion occur, seek medical help immediately.
Don't be alarmed; as long as you follow the directions precisely, you needn't worry. This recipe is fool-proof and as long as you can boil water, you can make this recipe!
Instructions:
Pour contents of pouch into a pot with 3 cups of cold water and bring to a boil. Reduce heat, cover, and simmer for 45 minutes to an hour, stirring occasionally. Remove cover and remove from heat and let steep for one hour. Mash contents with a spoon and then strain through a cheesecloth, discarding the solids. Make sure you squeeze every last delicious drop out through the cheesecloth! When the liquid has cooled and is slightly warmer than room temperature, add 1-2 cups of local honey or agave nectar, depending on the consistency you want, and mix well. I often like to add 1/2 cup of Applejack Brandy to enhance the shelf life and give it an old-timey flavor. Mix well and store in a sterilized glass container in the refrigerator for up to 6 months. Do not give honey to children under 1 year of age. Makes approximately 1.5-2.5 cups.
